How To Make: Portugese-Style Spicy Baked Scad

Ingredients

  • 6 pcs Dried Chili – with seeds, soaked to hydrate
  • 3 pcs Red Chili – with seeds
  • 1 pcs Red Birds Eye Chili – with seeds (optional)
  • 1 medium size Red Onion
  • 4 pcs Shallots
  • 1/2 thumb-size Ginger
  • 2 cloves Garlic
  • 1 pcs Lemongrass – bashed
  • 1 Lime – juiced
  • 1 tsp Tauchu (fermented soybean paste)
  • 2 tsp Cooking Oil
  • 2 tsp Fish Sauce
  • 1 medium size Shrimp Scad – cleaned
  • 1 pcs Banana Leaf – cleaned
  • 3 pcs Okras/Ladyfingers – thick slices
  • 4 tbsp Water
  • Pinch of salt, white pepper & sugar – to taste
  • 2 pcs Kaffir Lime Leaves – julienne
  • Aluminum foil or parchment paper – as parcel
  • 1/4 stalk Scallions – julienne

Steps

  1. Preheat oven to 200 deg. C
  2. Blitz all the chili paste ingredients in a food processor to a fine paste
  3. In a non-stick pan, fry the sambal until fragrant and oils separated. Add in water a bit at a time to prevent paste from burning. Once done, season with salt, pepper and sugar to taste
  4. Lay the banana leaf on aluminum foil. Take 1 spoonful of the sambal and spread as bed. Then place the fish. Pour in & smother the remaining sambal paste onto the scad. Scatter the julienne kaffir lime leaves and sliced okras. Fold the foil to seal. On an heat-proof tray, place the parcel into the oven and let it cook for 20 minutes.
  5. Once done, slice the foil to open the parcel. Garnish with chopped scallions. Serve with side of 1/4 portion warm rice (cut the carbs).
