How To Make: Caramelised Threadfin Slice

Ingredients
1 tablespoon minced garlic
1 tablespoon Fish Sauce
1 tablespoon of Raw Sugar
1 tablespoon Hoisin Sauce
2 tablespoons thinly sliced young ginger roots
Sea salt and pepper for seasoning fish slices
Few stalks of cilantro leaves chopped for garnishing
Steps
1. Prior to cooking, season the fish slices with sea salt and grounded pepper. Heat some cooking oil in the non stick pan and fry the minced garlic till fragrant.
2. Add raw sugar, fish sauce, hoisin sauce and water to boil. Over medium heat, cook the mixture for about 5 minutes until it starts to turn brown and bubbles appeared.
3. Add the fish slices and cook turning gently with a wooden spatula until the fish are coated and evenly spread with thickened caramel sauce. The cooking process should take less than 10 minutes. If you noticed the gravy is too dry, you can add a few tablespoons of water but one tablespoon at a time. Threadfin tend to break easily so be careful with the flipping of the fish.
4. When done, try to a serving plate and garnish with chopped cilantro leaves and balance of the sliced young ginger roots. Served with either a hot bowl of plain porridge or hot plain white rice.
